Thanksgiving Preview – part 2

Well, it’s Monday night on the countdown to Thanksgiving.  The turkey is soaking in the brine, right on schedule for my plan to brine for 24 hours then air dry in the refrigerator over Tuesday night, then cook on Wednesday afternoon.  I am considering trying one thing slightly different this year, and that would be the addition of rubbing the skin with a compound butter – perhaps something with thyme and sage.  Just haven’t decided for sure, because the brine already gives a very flavorful bird without that addition.

Anyway, in tonight’s post, which I’ll try to keep brief, I want to discuss a dessert that I have been doing for the past few years.  This one doesn’t go on the grill, but I do feel it’s worth discussing for the holidays.  Especially since I’ve been able to take the sugar out of the recipe without sacrificing flavor one bit. Thanksgiving Preview

Thanksgiving for our family isn’t a very huge affair.  In recent years it has become a get together where my son and I join my parents and grandmother and my daughter’s little family.  We each prepare a few dishes, and it makes for a nice family gathering without one person having to go all out.

This year Thanksgiving presents somewhat of a challenge, as usually we gather at my daughter’s, which is right next door.  However, this year we are getting together at my parents’ house which is about 70 miles away.  To complicate matters even more, my son-in-law will be working the night shift so we will have to have our meal around lunchtime.  So, it looks as though I’ll have to cook the turkey the day before and reheat.
